Chicken Curry

I love chicken curry. There is not another dish out there that will hit me like a ton of bricks with an intense craving that will take over my mind until it is satisfied. I think it's the combination of the intensely spicy and fragrant sauce while being transported through time and space with every bite. While eating chicken curry I feel like I am on the other side of the world, the exciting flavors dancing around my head like the pixar rat, ratatouille.


I have been cooking curry since my bible study teacher introduced it to me one night when I was 13. It was a particularly cold, unexciting day in mid-winter Wisconsin. When she served me that plate it was as if I was on vacation. I no longer was in a dining room in Wisconsin. I was in India lapping up everything she had to offer. That is what I love about food, it has the ability to move you, to make the mundane exciting and to enhance life.

Pollack with Diced Tomatoes

I was staring into the refrigerator and was stumped as to what to make. I had some elements of dishes I love however did not have the ingredients to complete them.With my stomach screaming at me I decided to get creative. I started with onions, garlic and a half of a green pepper. Caramelizing them to bring out the sweetness to enhance the fish. I seasoned the fish and then seared it in the skillet with the vegetables, breaking it apart into bite sized pieces. A can of diced tomatoes, a squeeze of lemon and fresh parsley round out the dish.

Creamy Coleslaw

Coleslaw is one of those dishes that really needs to hire a publicist. The soupy mess that is offered up at fast food chicken places gives coleslaw a bad rap. Potlucks don't do any better, serving up soggy cabbage with no flavor.

It doesn't have to be that way, good coleslaw is a balance of sweet and tangy, crisp and light flavors that excite the palate.

This recipe does just that. I can't change the fast food joints of the world, but with the recipe below we are taking a giant step in the right direction in the delicious world of slaw. Enjoy this slaw with homemade fried chicken, or spicy bbq ribs.

Ingredients
Serves 4, Prep 10 minutes, Marinate 1 hour

1 (16 ounce) bag coleslaw
2/3 cup mayonaisse
1/3 cup sugar
1/4 teaspoon salt
3 tablespoons vegetable oil
1 tablespoon white vinegar
1 tablespoon red wine vinegar
3 tablespoon diced granny smith apples
1/2 small red onion, diced

Directions
Combine mayonaisse, sugar, salt, oil, white and red vinegar together in a small bowl. In another bowl, mix coleslaw, onion and apples together. Add the mayonaisse mixture to the coleslaw mixture until combined. Let marinate at least 1 hour in the fridge.
